The 31/40 means 31 to 40 individual shrimp per pound of shrimp. We make it easy on you by peeling and deveining them, which takes a couple steps off the cooking process. Because these shrimp are raised in a spacious farm, they're more economical to harvest than wild shrimp. This allows them to be sold at a lower price. These are perfect in some shrimp scampi. You can also just simply sauté in butter, lemon and garlic for an added kick of protein to a salad or steak.
